There was a Saturday morning in 2009 when we realized that there wasn't anywhere in town where we could get a really good turkey sandwich. Two minutes later we had the name and the logo. A minute after that, we called the landlady and committed. Never was a deli more quickly conceived. And never regretted.
We created more than 50 sandwiches, from the Ali Baba to the Red Barber of Seville, from the F -Bomb to the New Turk, from the Old World to the New Deal, and who could possibly forget the Widget? There was a day when we replaced the Forager with the Forger, and no one noticed. We created special sandwiches with an audience of one and crossed our fingers that that one person would show up. Sometimes they did and sometimes they didn't. Happily, we will continue making sandwiches (which are a craft and not an art, by the way).
We stocked our case with dozens of the greatest cheeses & cured meats that Wisconsin has ever produced. We met most of their makers and learned about dairy production and cheese making. It is an art and a science; and far more interesting than we thought possible. The Wisconsin cheese journey has led us to new, wonderful places all over this state & the people are extraordinary. If you want a life filled with passion, get into cheese.
Naturally, we have regrets that the cheese & cured meats portion of the business never took off sufficiently to be sustainable. But we are proud of what we did and Kavarna has benefited from it in innumerable ways. Sometimes you have to prune in business. Look for plenty of new growth over the next six months.
So, at 4pm today. I plan to crack open a bottle of prosecco and share it with anyone who cares to raise a glass for Parisi's Delicatessen (and is over 21).
